I will take Matzah MEATza over Matzah Pizza any day, and that's coming from a Matzah Pizza lover. - Matza Meatza: 1 lb ground beef 1 red bell pepper, minced 1 shallot, minced 4 garlic cloves, minced 2 tablespoons chopped parsley 2 tablespoons harissa 2 tablespoons tomato paste 1 tablespoon ground cumin 1 tablespoon smoked paprika 2 teaspoons Aleppo pepper 1/2 teaspoon ground cinnamon Kosher salt and freshly cracked black pepper 4-6 matzahs Extra virgin olive oil, for drizzling Salad: 1 cup grape tomatoes, halved 1 cup Persian cucumbers, halved and thinly sliced 1 cup radishes, halved and thinly sliced 1 cup whole parsley leaves 1 small red onion, thinly sliced 2 tablespoons extra virgin olive oil 1 lemon, juice 2 teaspoons sumac Kosher salt and freshly cracked black pepper Other: Tahini, for drizzling Preheat oven to 450 degrees Fahrenheit. In a large bowl, mix your ground beef with all ingredients listed below (minus matzah) until it is fully combined. Divide the mixture onto 4-6 matzahs, leaving a crust on the edges. Depending on how many people you want to serve, you can put less or more on each. Place onto parchment paper lined baking sheets then drizzle with extra virgin olive oil. Bake for 10-12 minutes, until meat is cooked and the crust becomes a nice golden brown. While baking, mix all salad ingredients in a large bowl. Adjust seasoning to taste.
